Making
the sauces.......
All
of the stems are pulled off of the peppers and they are sorted by batch in sweatshop
fashion.
Depending
on the sauce, the peppers may be added directly to the steam kettle or processed
further.
Will
chops garlic. Jarred thinks about pizza.

40 gallon steam kettle can hold a lot of peppers and secret ingredients.

Removing
VERY hot and fast moving hot sauce can be interesting.
40
gallons of sauce fills an army of 5 oz woozy bottles.
We
can fill close to 1000 bottles of sauce in about 2 hours on a good day. Close
to 2000 on a bad day.
The
bottles get reducers and caps before being pressure-washed at high heat.

and Keith set shrink bands in place.
Then
they get blasted by the heat gun to create the always-fresh seal. After this
the bottles are labeled and put on the shelves. We label to order due to our
